I love anything Italian, everyone knows that and I love to cook Italian food. The one thing that I have never cooked or I don’t think I have even ever tried is polenta! I have promised to try and cook lots of different things, trying lot’s of new methods and polenta was one of them. I must admit this is cheating as the polenta was ready made and I will try it again sometime making it myself, but this recipe is simple, quick and delicious.
 
I must add that it was only Hubby & I that loved it, Olly & Luca didn’t seem impressed, but I think that was more due to the fact that they were playing with Luca’s new birthday presents rather than the polenta itself.

Serves 4
 
3 garlic cloves, chopped
2 x 400g cans chopped tomatoes
30g fresh spinach
500g pack ready-made polenta
1 tbsp olive oil
100g goats cheese with rind, broken into chunks
 
Heat oven to 220c/200c fan/gas 7 and boil the kettle.
 
In a bowl, mix the garlic and tomatoes with seasoning, then pour into a large baking dish.
 
Place the spinach in a large colander and pour boiling water from the kettle over until wilted. Rinse in cold water and squeeze out all the excess water you can with your hands. Roughly chop, season and scatter on top of the tomatoes.
 
Slce the polenta, then overlap on top of the spinach. Drizzle with the oil and bake in the oven for about 10 – 15 minutes.
 
Scatter over the cheese and return to the oven for about 5 minutes more, or until the cheese is golden and bubbling.
 
So easy, so yummy, serve with lovely fresh bread to mop up the juices.
