So October the 25th was the baby of my brood of five’s birthday, I say baby, but he is now as tall as me and is such a mature, intelligent and caring young man, having five children aged from 27 down to 14 has brought so many exciting new adventures to my life recently! Simon has just got engaged, Stephen is expecting his Son in December (my first Grandchild), Rosie is moving out this weekend into her first home, Olly has just been promoted and Luca is now all grown up, but unfortunately along with such happiness comes pain and thankfully we are all so close and I could not imagine dealing with the imminent loss of my best and longest friend without them, I know that I am about to encounter one of the saddest and hardest times of my life, but I know that they will all be there for me.

All this brought me to wanting a new adventure and as you know I recently started a new job, it was to help me get through this difficult time, it is so busy that you don’t get time to breath, let alone think or worry, but also I have two other businesses to run and Gelsomina’s Cucina to keep on top of, have I bitten off more than I can chew ??? Most probably, LOL !!! So please forgive me when you see that I have (for the first time ever, I would like to add) used a packet cake mix!!! Sacrilege I know, but I am just soooo busy. I am so sorry, but I have added a link to my favourite homemade brownie recipe below which I hope will make up for the use of the packet mix.

Now Luca found this cake on Pinterest months ago and sent it to me with a very large hint that he would like it for his birthday, its so bad for you, but so delicious, so I was more than happy to make it for him.

It is calorie overload, but it is chocolatey, gooey, chewy and crispy all in one mouthful, served with a fabulous good quality vanilla ice cream, or any ice cream flavour that you desire and drizzled with rich chocolate sauce, caramel or fudge sauce, maybe even all three, you have the perfect birthday treat. Luca was one very happy birthday boy I must say.

Well I must go, I have spent the morning cleaning the house from top to bottom, spent a couple of hours on Diana’s House  , just launched the Sale, so that will hopefully keep me busy when the orders start to flood in, written up this post and now it is time to get ready for work, I am on the 2pm to 8pm tonight, feeling pretty rough as I have been really poorly, I think its safe to say that I was right about biting off more than I can chew, oh well, I do love a challenge.

For the Cookie Dough
1 cup (2 sticks) butter, softened
1 cup granulated sugar
¾ cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips

1 pkg Double Stuffed Oreos

For the Brownie
1 Family Size (9×13) Brownie mix + eggs and oil as called for on the back of the box
¼ cup hot fudge topping

Line a 9×13 baking dish with foil or parchment paper and spray with cooking spray. You don’t have to line it, but it will make it easier to get them out!

Homemade Chocolate Brownie Recipe !

Preheat oven to 350F/175C
Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes.

Add the eggs and vanilla and mix well to thoroughly combine.

In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined.

Stir in chocolate chips.

Spread the cookie dough in the bottom of prepared pan.

Top with a layer of Oreos.

Mix together brownie mix according to directions, adding an optional ¼ cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos.

Bake at 350F/175C for 45-55 minutes. Let cool completely before cutting. Brownies may still be gooey in the middle when still warm, but will set up perfectly once cooled. Enjoy!!
