Everyone should have a simple chocolate cake in their recipe collection & I am a great believer in if you find a recipe that works, hang on to it & use it time & time again. This following recipe is just that, so easy to make but tastes delicious and can be easily dressed up for a dinner party served with strawberries & Limoncello cream that appeared on my Blog earlier. I love to dust it with icing sugar & then my now famous glitter.

Torta al cioccolato (Chocolate Cake) – Makes one 24cm/9 1/2 in cake
 
200g good quality dark chocolate
6 tablespoons of milk
100g butter
4 eggs separated
150g caster sugar (I always use golden here, adds to the flavour)
50g cake flour
1 1/2 teaspoons baking powder
 
Preheat the oven to 180c, 350f, gas 4. Butter & flour a 24cm springform cake tin.
 
Break up the chocolate into small pieces & melt it together with the milk & the butter in a small saucepan, set over a larger saucepan of simmering water.
 
Whip the egg yolks with the sugar in a bowl until thick & creamy. Scrape into the melted chocolate, whisking quickly to prevent the egg mixture from cooking.
 
Whisk in the sifted flour & baking powder. Whip the egg whites to soft peaks & fold them gently into the batter, incorporating well.
 
Pour into the cake tin & bake in the preheated oven for about 35 minutes or until a skewer inserted comes out clean. The cake should be soft and moist, and will slightly indent in the middle when cool.
 
Serve dusted with a little icing sugar, or with a little pile of fruit and whipped cream, or as above with Limoncello cream, my favourite.
