Its funny the things that pop into your mind sometimes and I can not think about this simple pea soup without thinking of the poem the Owl and the Pussycat and their pea green boat !! I know, I am a little odd, LOL.

Anyway on to todays soup, this is so simple, I know most soups are but this one uses so few ingredients, the sort of ingredients you have laying around and need using up, there is no fiddling around and it truly is made in minutes. My only concern was that I thought it was going to taste boring and bland, but boy was I wrong, it is delicious. Clean and fresh tasting and would be a perfect soup to serve in the Summer.

So life is still manic, Hubby is no better, he had just got to the point of being able to put weight on his foot and then Luca stood on it and put him right back to square one again, so I am still juggling everything and looking after his dog. I did manage to sneak out yesterday to my sewing class and I had a great time, Samantha was lovely and so patient and I came away with a fabulous cushion cover which I am extremely proud of. Today I have done so much, cleaned the house from top to bottom, done the washing and ironing and took the dog out for an hour and a half, but I thought I would sit down for a few minutes to get this yummy soup onto the blog, then its back to bread baking, soup making and maybe, if I have the energy, a cake.

I hope you are all enjoying my soups and if you have never made your own soup, this one would be the perfect one to start with. Homemade soup is so much better than shop brought and a great way to use up leftovers.

pea soup500g frozen peas
50g butter
1 small onion, finely diced
1 small leek, finely diced
1 celery sticks, finely diced
750 ml vegetable stock

soup ingredientsMelt the butter in a saucepan, add the onion, leek and celery and then cook gently for 10 minutes until soft and transparent. Add the stock, then simmer for 5 minutes.

pea soup ingredientsAdd the peas, bring back to the boil, then simmer for a further 3-4 minutes until the peas are just tender.

Blend until smooth, then season to taste and serve.
