Well I said that I wouldn’t be writing anymore blogs over Easter, what I hadn’t banked on was Hubby just wanting to lay a round in bed with his laptop attached to his face, so I have decided to leave him in bed and get up and start to prepare for tomorrows lunch as I have one of my dearest friends and her family coming over for Sunday lunch, that done and the sun streaming into our middle lounge has enticed me in to sit at my new little desk and write. It was a bargain I found on our local for sale Facebook page and I have popped it into this lounge just until I get a feel for what colour I should paint it. It is a great place to sit and write as I can look out of the French windows over the garden, I sometimes feel in the sewing room or my workshop that I am a bit shut away.
It needs a little attention but I will post pictures at a later date when it has been transformed and back in from the workshop 🙂
So back to the recipe, these nutritious little bars remind me of a healthy snickers, if you love peanuts you will love these and they are just perfect to grab on the way out of the door for breakfast, when you just don’t have the time to make something, perfect for lunch boxes and picnics. I like them with a cup of tea mid morning to help me keep going through until lunchtime.
These yummy energy bars are full of flaxseeds which is a great anti-inflammatory, high in omega fatty acids, they are great for people like me that just don’t like oily fish and think that salmon is a highly overrated fish !
So I hope you are all enjoying your Easter weekend and being productive, I am off to view another house this afternoon and will pop into two of my favourite shabby chic furniture shops, one to look for new bits for the house and the other to get some idea on what colour I want to paint my little desk, it will be Annie Sloan paint, but there are so many to choose from !!! 2 cups oatmeal
1 cup peanut butter or other nut butter
2/3 cup (225g) honey
2 cup coconut flakes, wheat germ, sesame seeds, or a mixture of all three (can also substitute oatmeal or protein powder, if you prefer)
1 cup ground flaxseed
1 cup mini chocolate chips
2 teaspoons vanilla
Mix all ingredients together. Roll into balls.
Place balls on a cookie sheet and freeze for one to two hours. Remove from cookie sheet and place in an airtight ziptop freezer bag (or other airtight container).
To serve remove desired number of balls and thaw at room temperature for 15 to 30 minutes. You can also warm them for 30 seconds or so in the microwave, we just eat them straight from the freezer and they are delicious.
We didn’t make ours into balls as you will of seen in the photo’s, I just pressed the ingredients down into a baking tray, froze, then removed from the tray, cut into squares and popped them back into the freezer in a tin.
