I know, its been a very long time since my last post and I am very sorry, but as I think I have already mentioned I have been rather busy setting up and running my new business www.dianashouse.co.uk  , please check out the website, I am so proud of it and it has been a huge amount of work, but so worth it as it has just taken off in leaps and bounds, actually beyond my wildest dreams. I have been completely overwhelmed by the support that I have received and the loyal customers that I have built up and I thank them all from the bottom of my heart for all their lovely praise.

Each piece on the new website is handmade by me, on the embroidery items I have sown every last little stitch, hours and hours of work but I just love the pleasure that each piece has brought to my customers.

I do have to admit that it has taken a toll on my health and I have been rather naughty neglecting my diet and exercise, and the stress does get to my skin and hair, so I could not wait for this gorgeous new book ‘Nourish’ from Amber Rose (who you all know I love) , Sadie Frost and Holly Davidson to arrive, it seems like forever since I pre-ordered it and I was not disappointed. It has inspired me and given me the kick up the bottom I needed to get back on track. I have been doing yoga again and have already made a few yummy and extremely healthy recipes from the book. I also have to say that it is just beautiful, the photography and layout are stunning. Its a good all round good read.

Anyway, back to the beans !!! This weekend I knew we had planned a rather lazy weekend, the first in forever, but I knew that we would crave snack food and be permanently hungry so I decided to be armed and ready and on Friday morning made a huge batch of these very simple to make, but extremely filling and nourishing beans. Saturday morning I simply reheated them and served them on a fresh sourdough that I toasted with a sprinkle of cheese and Worcestershire sauce, fresh coffee and orange juice and we were set up for the day.

spice-scented beans

 

Serves 4 to 6

3 tablespoons cold-pressed olive oil
2 medium onions, roughly chopped
2 garlic cloves, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon whole cumin seeds
1 x 400g tin chopped tomatoes
1 tablespoon tomato puree
70g maple syrup
80ml apple cider vinegar
250ml water
2 x 400g tins of white beans (cannellini or butter beans) rinsed & drained
Salt and freshly ground black pepper to taste

To serve (optional) :-
A few sprigs of fresh corriander
1/2 medium chilli, deseeded & finely chopped
A few slices of your favourite cheese

Heat the oil in a large heavy-based casserole pan or saucepan, add the onions, garlic and cumin, stir for 3 to 5 minutes, or until the onions are translucent and soft.

Add the tinned tomatoes, the puree, maple syrup, cider vinegar and water. Bring to the boil, add the beans, reduce the heat to very low and leave to simmer gently, uncovered, for about 1 1/2 hours, you will need to stir the beans regularly and add more water if they a begin to dry out. After this time the beans should be lovely and soft and the sauce wonderfully thick. Season to taste.

Serve on gorgeous toasted sourdough or bread of your choice, with or without the optional to serve ingredients. As always make the recipe your own, you could even try adding a little curry powder instead of cumin for a different take and serve on a baked potato.
