If you are a regular reader of my blog you will know that we recently moved, downsizing from our large home in Oxted to a smaller and far more modern and manageable home in Edenbridge, we have been here nearly 3 months now and just love it and can not ever imagine living anywhere else. As you know our family evolves around food, we come to the table every day to eat, chat and laugh and celebrations of all kinds are extremely important to us as are family traditions. The new house has more than past the test and is a great place to spend time with family and friends.
For a while I didn’t even manage to get to the kitchen, I have spent so many hours cleaning, decorating and now getting back into my other business ‘Diana’s House’ that I really just have not had the time to bake, but a recent visit to The Cake Shed has inspired me and I am back in the kitchen, especially on Fridays as you know how much I love to bake ready for the weekend.
The inspiration for this cake, as I have already mentioned, came from The Cake Shed in Tunbridge Wells, their Lemon Drizzle Cake is to die for and the crust of drizzle is out of this world, I just wish I knew how they did it !!! So last week I baked a Lemon Drizzle Cake and this week I have decided on a Grapefruit one, all ready to enjoy tomorrow morning with Hubby with an Espresso, hopefully in a sunny conservatory, if not the comforts of our bed, I am happy either way.
One of the best things about a drizzle cake is the simplicity, very few ingredients, so simple to bake and you can play around with the flavours, you can try lemon, orange, grapefruit or even infused sugars, next week I am thinking of baking a rose geranium one, but you could use lemon thyme, lavender, rose, elderflower, anything that really takes your fancy.
So heres to enjoying the gorgeous weather we have been having, lots of tea and of course, lots of cake.

Note : Of course this is not the first cake that I have had to bake at home after trying it in some cafe/restaurant somewhere, you may also like this https://www.gelsominascucina.com/2013/09/lemon-feather-cake-gluten-free.html , first tried in Juliets, also in Tunbridge Wells, also a lemon cake, so light and also gluten free. This is a little harder to bake, but well worth the effort.
3 large eggs
170g self raising flour
170g caster sugar
170g unsalted butter (room temp)
Zest of 1 pink grapefruit (2 lemons if doing lemon drizzle)
Drizzle:
Juice of 1/2 of the pink grapefruit,the one you zested (juice of 2 lemons if doing a lemon drizzle)
110g icing sugar (I used caster as I am trying to perfect The Cake Shed Crust !!)
Grease a bread tin (about 24 x 10.4) & pre-heat your oven to 180C/350F.
Cream together your cake ingredients until you’re left with a nice smooth cake batter. Pour into your pan & bake for about 30-35mins.
While you’re waiting, mix together your icing sugar & grapefruit/lemon juice until totally smooth, pop it to one side.
After 30mins check the cake by inserting a skewer into the middle, if it comes out clean it’s done. If not, give it a few mins more.
When it’s ready, remove from the oven, leaving the cake in the tin use your skewer to poke holes all over the cake, all the way down to the bottom. Pour over your grapefruit/lemon glaze.
Allow to cool completely, turn out of the tin, slice, serve and enjoy.
