Now this recipe came with the original title of ‘Beet and Carrot Detox Bake’, not wanting you all to groan and think, here she goes on again, banging on about nutrition I decided to tone the bold claim down a little and called it Beetroot, Carrot and Leek Bake instead, but you all know that my favourite saying is that you can not run a car without fuel and you can not expect your body to run without food, its just that simple, so please bare with me while I bang on a little about this very healthy dish, which is so delicious, so simple and all the vegetables are currently all now in season.

Beetroot has to be one of my favourite root vegetables, it is amazing for regulating blood pressure, supports healthy digestion, has amazing anti-cancer properties, acts as a detoxifier by supporting the liver and purifies the blood, its rich in vitamin C, B vitamins, potassium, and manganese. All of these support the bones, nervous system, liver, kidney, and muscular system. Beetroots can also help to energize the body! All good so far…

Now carrots are rich in vitamin C, A, and K. These nutrients provide protection against heart disease and stroke! They help to build strong bones, support a healthy nervous system, great for eyesight and are rich in antioxidants which are beneficial for caner prevention and detoxification, anti-inflammatory, helps with water retention and puffiness, supports healthy memory and cognitive function, you really can not ask for more than that.

I won’t bang on about leeks today, I think you may all of had enough, LOL, but this week I was asked if I was my 25 year old Son’s sister and was asked what my secret was by a 27 year old girl who thought that I was not much older than her and could not get over how fantastic my skin was, I am not bigging myself up here, I think I look ok, but not amazing, but I must admit I do feel ridiculously healthy and I love knowing that the delicious foods that I eat are also nourishing my body and helping me to stay young, youthful, and healthy! Its an old adage but you truly are what you eat, its no secret that I believe that you can cure so many health problems by altering your diet and just taking really good care of ourselves is not selfish, its just common sense and a responsibility to those that you love to set them a great example but also to keep yourself healthy for them.

I know, to much banging on, but it a subject close to my heart and sometimes I just can not help myself, so please forgive me.

This dish, all health virtues aside is delicious, I think you could just have a great big bowl of it, with a nice wholemeal roll and you  just have a great filling and hearty meal, but we had it as a side dish with gammon, but feel free to serve it with what ever takes your fancy.

Beetroot, Carrot and Leek Bake

6 carrots
3 large beetroots
2 leeks
3 cloves garlic, minced
Olive oil
4oz/120g Chevre goat cheese or feta
Tamari
Fresh black pepper

Scrub your beetroot clean and cut the stems off. You can leave the roots while they steam, this actually makes them sweeter!

In a large saucepan covered with a lid, steam your beetroot whole until soft, about 10-15 mins. Check them regularly and add more water as needed.

After about 10 mins, you can add your carrots to the same pan or use a different pan if you would like to preserve the individual flavours.

While your veggies are steaming, prepare your leeks.

Drizzle olive oil a large pan over a med/high heat, and add minced garlic and chopped leeks. Stir and cook for several minutes until slightly soft.

Once your veggies are done, layer them in a baking dish. Drizzle them with Tamari, fresh cracked pepper, and crumbled cheese.

Put under a hot grill until the cheese is golden brown.
