Now I can not claim to of made this myself, this Spaghetti Pie was ready, waiting and welcoming me home after I was doing the evening shift at the surgery, I have read through the instructions and it all seems fairly easy and straight forward, apart from slicing the onions and a little bit of cheese grating there really is not that much to it.

However, please do not under estimate the wonderfulness of this dish, its delicious, hearty and just perfect on a cold winters evening. It makes rather a huge amount so would be perfect for a very relaxed supper with friends or family. Take it straight to the table and serve with a nice salad, a homemade baked focaccia , fresh from the oven, good wine and a fab dessert you have an unpretentious dinner that leaves you time to enjoy the company, rather than be slaving in the kitchen.

I would not normally recommend anything like this for a dinner party, as I love pretentious, gorgeous food, table set beautifully, best glasses and linen etc, etc, but sometimes when it is just a case of bringing everyone to the table it is as much about sharing time together as it is about the food.

There are times recently when I do miss our old house, it was great for entertaining, and of course I miss the apple trees, the plums, the fruit cage and so forth, but having to downsize due to my back has brought so many other great things into my life, I love how easy this house is to keep clean, its always so warm and the garden we can manage alone, it has allowed me not only to run my businesses but also return to work at a very sad time and the need to be around people. It is nearly two weeks since I lost my best friend and I miss her so much, but I know she will be looking down telling me ‘life must go on’! It does, she is right, but it just doesn’t seem the same without her.

Sorry for being a little sad today, its a hard day for me as it is my first day of not going over to see my lovely friend and I am feeling reflective, so I am keeping myself busy to get through the day. So far I have scrubbed the house from top to bottom, done a load of washing, baked a cake and now I am writing this post, next I am back off to the kitchen to ice the cake. I will be exhausted by the end of the day, but just think how much I will of achieved, LOL !!!

I am going to stop waffling on now, not my greatest post, but just wanted to share my thoughts,  so I would like to end this post by saying, “thank you Hubby for this delicious dinner “.

spaghetti pie

1 pound spaghetti cooked according to package directions
5 cups pasta sauce
1 pound ground Italian sausage or ground beef
1 tablespoon olive oil
1 small onion, diced
1 teaspoon oregano
1/2 teaspoon red pepper flake
3/4 teaspoon garlic powder
1- 8 ounce package cream cheese, softened
3/4 cup sour cream
1 teaspoon Italian Seasoning
3 spring onions, chopped (reserve a few for garnish)
1 and 1/2 cups cheddar cheese
1 cup Monterrey jack cheese

Pre-heat your oven to 350F, 180C.

Cook pasta according to package directions. When it’s done cooking, drain the water then stir in 2 cups pasta sauce.

Heat 1 tablespoon olive oil in a large skillet over medium heat. Saute the onion until it’s just about done.

Add in Italian Sausage and continue cooking until the meat is cooked through.

Drain any excess fat. Stir in 1 teaspoon oregano, 1/2 teaspoon red pepper flake and 3/4 teaspoon garlic powder.

Stir in remaining 3 cups pasta sauce and simmer for about 10 minutes.

Spray a 9 x 13 inch casserole dish with non-stick spray. Arrange the pasta that you tossed with sauce in the bottom of the pan.

In a small bowl combine softened cream cheese, sour cream, most of the scallions (reserve a few for garnish), and 1 teaspoon Italian Seasoning.

Drop spoonfuls of this cheesy mixture on top of the pasta, then use a spatula to spread it evenly.

Pour the meat/sauce mixture over the cheese layer, then top with 1 and 1/2 cups cheddar cheese and 1 cup Monterrey jack cheese.

Bake for 30 minutes, or until the cheese has melted.
