Today is a good day, a very good day in fact ! The reason being, I am on the mend and I am ecstatic. This morning I had my last hospital visit and even though I still have a long journey of healing a head of me I am allowed to start putting weight onto my foot, I am allowed to start walking again and I can return to work. Life will soon be back to normal.
Today’s recipe again was cooked by my wonderful Hubby, who I would just like to thank as he has been so utterly amazing over the last few months and I could not of got through any of this without him, so Thanks Hubs, you are the best.
Now firstly lets mentioned the name of this recipe, ‘Sesame Kale Glow Bowl’! I know you are probably wondering why it is called this, but just look on Pinterest and you will find so many glow bowl recipes or buddha bowl recipes. A glow bowl is basically a nourishing bowl which is healthy, plant based vegan ingredients and is dedicated to making your skin glow from plant based whole foods and the Buddha Bowl is defined in the urban dictionary as “a bowl which is packed so full that it has a rounded ‘belly’ appearance on the top much like the belly of a buddha.” Again packed full of healthy foods which pretty much cover everything you need for a balanced meal. They are full of variety, taste, texture and so much fun.
This was always going to be a winner with me as it has one of my all time favourite ingredients in, ‘KALE’, I love the stuff and can not get enough of it. Kale aside, this dish brings different textures and taste in every mouthful and of course lots and lots of great nutrients. Its filling and we had it as a main evening meal, make extra and you can pop some in your lunchbox for a healthy lunch the next day.
I am hoping to bring you a few of these sort of recipes over the following weeks, as the weather begins to improve and hopefully al fresco dining returns, these recipes will be great for warm summer evenings, helping you to get fit, healthy and glow, ready for that bikini body.

Serves 2 to 3
1 cup quinoa
1 tablespoon coconut oil/sesame oil
1/2 of a red onion
1 clove garlic, minced
3 cups kale, de-stemmed + torn
2 cups broccoli florets (about 1 small head)
4 ounces of tempeh, chopped/crumbled (I used Tofu)
2 tablespoons tamari/soy sauce
2 tablespoons water
Juice from 1/2 – 1 lime, depending on your liking
1/2 tablespoon dijon mustard
1 teaspoon fresh ginger, minced
1/2 teaspoon black pepper
Dash of red pepper flakes (optional)
2 tablespoons sesame seeds (black or white)
Combine 1 cup quinoa with 2 cups water in a medium-sized pot. Bring to a boil and reduce heat to simmer for about 15 minutes or until all water has been absorbed.
Meanwhile, in a small saucepan, melt the coconut oil on medium-high heat. Add the red onion and sauté for 2-3 minutes. Add the garlic, kale, broccoli and tempeh. Sauté for about 3 minutes.
In a small bowl, combine the tamari, water, lime juice, dijon mustard, ginger, pepper, red pepper flakes and sesame seeds. Add mixture to saucepan with vegetables and mix until well combined.
Cook for about 2 more minutes.
Once quinoa is finished cooking, scoop it into 2-3 bowls and top with the vegetable mixture. Add extra tamari/soy sauce as needed.
