Things have been so busy lately, I have so many blog posts to type up and just have not had the time to do them, now we are back from Vegas, back into a routine, I decided that I would set aside some time today to at least get one or two done. I suppose I should of typed them in the order that they were cooked, but I really wanted to get last nights recipe on as it was so delicious (please see previous post) and then as I have been asked for this recipe by a friend I decided that this one had to be next.
I love many things curried, potatoes, eggs, meat, fish and so on, but one of the things I love most is curried cauliflower, this simple vegetable takes on flavour so well and when I found this recipe I just knew that we had to try it. The recipe comes from Deliciously Ella , I love her recipes and own a couple of her books, I can highly recommend them and I can also highly recommend these yummy Curried Cauliflower Wraps.
Curried Cauliflower Wraps are another simple recipe that takes a few fabulous ingredients and with very little preparation creates a filling, healthy and delicious lunch or dinner.
The curried cauliflower is subtle, it doesn’t blow your head off and so is a great way to get children eating cauliflower, a vegetable that they very often turn their noses up to. Also if you are serving meat wraps and need a vegetarian alternative for a guest, these are perfect. The greens deliver freshness and the hummus just finishes the whole thing off nicely, everything comes together and works together.
So another recipe done, short and sweet, but now at least I can share it and hope that you all love it as much as we did.

Makes: 2 wraps
2 cups cauliflower florets
2 teaspoons olive oil
2 teaspoons good quality curry powder
1/4 teaspoon salt (see note)
2 wraps or pita bread
1/4 cup hummus
3 cups rocket, spinach, or lettuce (we used rocket)
1/4 cup diced spring onions, plus extra for topping
2 tablespoons minced coriander, plus extra for topping
1 tablespoon olive oil
1 tablespoon lemon juice
Preheat oven to 200C/400F.
Cut cauliflower florets into small, bite-sized pieces. in a roasting pan or sheet tray covered with parchment paper, toss cauliflower with olive oil, curry powder, and salt. Bake until browning, 20 to 25 minutes.
Meanwhile, spread hummus inside the wrap or pita bread.
Toss greens with the spring onions and corriander.
In a small bowl, whisk together the olive oil and lemon juice. Pour over the rocket and toss until well coated. Divide the greens into the wrap/pita then once the cauliflower is done, divide on top of the greens.
NOTE : If using a curry powder that has salt, omit this salt.
