I know, my obsession with breakfasts and brunches is a little odd for a girl that never eats breakfast during the week !!! I start every day with a fresh black coffee that has Bovine Collagen and MCT Oil from Hunter and Gather in it, but, if I get time and boy do I like to make time at the weekend, I absolutely love to treat myself to a very special brunch, especially after a work out and this Protein French Toast may hit the spot for my naughty cravings of all things sweet but also packs a punch when it comes to getting my much needed dose of protein.
This Protein French Toast is not only made with whole eggs and extra egg whites but also protein powder and if you need even more protein you can always use protein bread. I however used a rather lovely tiger bread and my vanilla protein powder from Arbonne, but this is where it can get very interesting, protein powders have come a very long way over the last few years, with so many companies offering the most wonderful flavours, you can use any protein powder you like. Just imagine the fun and possibilities ….
For example, ‘My Protein’ offer around 60 different flavours, anything from your usual strawberry, chocolate and vanilla to the more unusual Sticky Toffee Pudding, Jam Roly Poly or even Jelly Baby Toasted Marshmallow , just think of all the fun variations you could come up with. I am obsessed with anything Coconut, so my next purchase of protein powder will possibly be Whey Protein Coconut Crisp from Foodspring as their Protein Cream is out of this work and I think it will be great for not only this recipe but also to make tropical shakes with.
Before I sign off, I do have a confession, as you all know I do not like to stick to the rules of when and where food should be eaten, so the first time I tried this recipe was for my dinner the other night, I had been to my lift class, lifted some heavy weights, ran to the class and back and just needed a protein fix that was quick and filling, this definitely fitted the bill. I served it with a pile of mixed berries that I had grabbed from the freezer, warmed in the microwave and drizzled over some maple syrup, it was heavenly and just what I needed, so enjoy, anytime you like, however you like, just as long as you are having fun, rules are made to be broken!

Recipe
Ingredients
6 slices bread of your choice (gluten free, protein bread, brioche, etc)
2 large eggs
3 large egg whites
1 teaspoon cinnamon (I left this out as I am not a fan, plus it will depend on which flavour protein shake you are using, cinnamon may not compliment your flavour choice, if you are using cinnamon maybe try the organic Ceylon cinnamon as it is widely known for its wonderful health benefits).
1/2 cup of milk of your choice, I used Koko milk as it is my favourite, but cows milk, nut milks, any will work.
1/2 cup protein powder, I used Arbonne vanilla protein powder
1/2 teaspoon of a really good vanilla paste
Instructions
In a mixing bowl, whisk together all the ingredients, apart from the bread. I did whisk mine in a square deep Pyrex bowl that fitted the bread to save on the washing up, no point getting two bowls dirty !
Dip each slice of bread in to the ‘custard’ mixture, ensuring each slice is nicely soaked on both sides. Repeat the process until all the bread is used.
I put a little olive oil and butter into a heavy based frying pan and melted on a medium heat, this is my usual non stick pancake pan and the way I always cook my pancakes, I love the buttery taste and it browns the bread so nicely, but you can spray a non-stick pan with cooking spray if you prefer. Once hot, add slices of the bread and cook for 4-5 minutes, flipping halfway through.
The recipe says to shift powdered sugar over the French toast and serve immediately. I like my French Toast to be like a doughnut and always use caster sugar, if you want to reduce the calorie intake you could always leave the sugar out, especially if drizzling with honey, maple syrup or agave nectar , or if you like them (I personally don’t) a sugar substitute like Stevia. Top with fruit, chocolate shavings, nuts, seeds, anything that compliments your choice of protein powder.

* I have to confess I haven’t tried any of the suggestions below, but thought they were very helpful tips, if any one does try them, please let me know how you got on as feedback. I will update this post if I try any in the future, unfortunately I don’t ever have any left to save as I am always to much of a piggy and eat it all in one sitting ! I do halve the recipe if its just for me.
TO STORE: Leftovers can be stored in the fridge, covered, for up to three days.
TO FREEZE: Place the cooled French toast slices in individual freezer bags and store them in the freezer for up to 6 months.
TO REHEAT: You can reheat the French toast by placing them in a toaster like you would normal bread, or in a preheated oven.
